A delicious and healthy twist on tacos, these stuffed sweet potatoes are packed with flavorful ground turkey and melted cheese.
Ingredients
Sweet Potatoes

sweet potatoes
(Pierced and microwaved)

lean ground turkey

garlic, minced

chili powder

olive oil

canned crushed tomatoes
Instructions
Pierce sweet potatoes and microwave on HIGH for 4-5 minutes per side until tender. Cool slightly.
Cut sweet potatoes in half, scoop out flesh, and mix with olive oil, cumin, salt, and pepper. Fill skins with mixture.
Cook ground turkey in a skillet until no longer pink. Add garlic, chili powder, spices, and crushed tomatoes; stir.
Spoon turkey mixture into potato skins, top with cheese, and broil for 30 seconds until melted.
Notes
For extra flavor, add chopped cilantro or a squeeze of lime before serving.
