A delicious and healthy twist on tacos, these stuffed sweet potatoes are packed with flavorful ground turkey and melted cheese.

Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes (Pierced and microwaved)
  • 3/4 pound lean ground turkey
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/4 cup grated pepper Jack cheese
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin (divided)
  • 1/4 + 1/8 teaspoon salt
  • 1/4 + 1/8 teaspoon ground pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cups canned crushed tomatoes

Instructions 

  • Pierce sweet potatoes and microwave on HIGH for 4-5 minutes per side until tender. Cool slightly.
  • Cut sweet potatoes in half, scoop out flesh, and mix with olive oil, cumin, salt, and pepper. Fill skins with mixture.
  • Cook ground turkey in a skillet until no longer pink. Add garlic, chili powder, spices, and crushed tomatoes; stir.
  • Spoon turkey mixture into potato skins, top with cheese, and broil for 30 seconds until melted.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
