Ingredients

Rice

  • 3 cups cooked rice (day-old rice works best for texture)

Oil

  • 2 tablespoons sesame oil (for that nutty flavor and aroma)

Vegetables

  • 1 cup chopped white onion (about one small onion, for sweetness and depth)
  • 1 cup frozen peas and carrots (a colorful mix of veggies that adds nutrition)

Sauces and Eggs

  • 2-3 tablespoons soy sauce (adjust to your taste for that umami kick)
  • 2 lightly beaten eggs eggs (to add protein and richness)

Garnish

  • 2 tablespoons chopped green onions (optional, for garnish and a fresh flavor)

Instructions 

  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Add chopped onion and cook until translucent, about 2-3 minutes.
  • Stir in frozen peas and carrots, cook for another 2 minutes.
  • Add cooked rice and soy sauce, stir well to combine and heat through.
  • Push rice mixture to one side, pour beaten eggs into the empty side, scramble until just set, then mix everything together.
  • Garnish with chopped green onions before serving.
