Ingredients

Dry ingredients

  • 2 cups cake/pastry flour (all-purpose flour is a great substitute)
  • 2 teaspoons teaspoons baking powder
  • 0.5 teaspoon teaspoon baking soda
  • 0.5 teaspoon teaspoon salt (add a pinch if using unsalted butter)

Wet ingredients

  • 0.5 cup cups butter (softened, at room temperature)
  • 0.75 cup cups granulated sugar (divide between batter and topping)
  • 2 large pieces eggs (room temperature)
  • 1 teaspoon teaspoon vanilla extract
  • 0.5 cup cups Greek yogurt or sour cream (room temperature)
  • 1 tablespoon tablespoon lemon juice (for enhancing flavor)

Fresh strawberries

  • 1.75 cups cups strawberries (fresh, firm, ripe)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a skillet or baking dish.
  • Mix dry ingredients: flour, baking powder, baking soda, and salt.
  • Cream butter and 0.75 cup sugar until light and fluffy. Add eggs one at a time, then vanilla and lemon juice.
  • Gradually add dry ingredients and Greek yogurt to wet mixture, mixing until just combined. Fold in chopped strawberries.
  • Pour batter into prepared skillet. Top with remaining sugar and sliced strawberries if desired. Bake for 25 minutes or until golden and a toothpick comes out clean.

Notes

For a richer flavor, sprinkle some powdered sugar or serve with whipped cream.
