A flavorful bowl combining tender chicken, fragrant rice, and crisp vegetables, all coated in a sweet and spicy honey sauce.

Ingredients

Grains

  • 1 cup jasmine rice
  • 2 cups water

Protein

  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)

Sauces & Condiments

  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar

Vegetables

  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 medium carrot (julienned)

Seasonings & Garnishes

  • to taste salt
  • to taste pepper
  • 1 tablespoon sesame seeds
  • 2 green onions sliced

Instructions 

  • Rinse rice, combine with water, and cook until tender (15 minutes).
  • Whisk honey, sriracha, soy sauce, rice vinegar, garlic, and ginger to make sauce.
  • Cook chicken in skillet until browned (5-6 minutes), then add sauce and cook 2 more minutes.
  • Stir-fry vegetables in the same skillet for 4 minutes, season with salt and pepper.
  • Combine chicken, vegetables, and sauce; serve over rice, garnished with sesame seeds and green onions.
