A fresh and vibrant salad featuring grilled chicken, fruits, nuts, and a tangy dressing, perfect for warm weather.

Ingredients

Dressing

  • 1 tablespoon olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (or to taste)
  • 3 tablespoons plain Greek yogurt (nonfat, lowfat, or whole milk)
  • 1 teaspoon poppy seeds
  • 1/8 teaspoon salt (or to taste)
  • 1 tablespoon roasted sunflower seeds
  • 1 tablespoon sliced almonds
  • 2/3 cup cooked brown rice (chilled)
  • 6 ounces rotisserie chicken (or leftover grilled chicken)
  • 4 cups baby lettuce
  • 3/4 cup blackberries
  • 1/2 cup sliced strawberries
  • 1/4 cup thin sliced sweet onion

Instructions 

  • Mix olive oil, vinegar, honey, yogurt, poppy seeds, and salt to make the dressing.
  • Toast sunflower seeds and almonds in a pan for 30-45 seconds until fragrant.
  • Shred chicken, chop lettuce, slice strawberries, and thinly slice onion.
  • Combine rice, chicken, berries, strawberries, and onion; top with seeds and nuts.
  • Pour dressing over and toss gently. Serve immediately.

Notes

Feel free to customize with your favorite fruits or nuts for variety.
