Chocolate Pudding
2cupsheavy cream
1 1/2tspgelatin powder
1/3cupsweetener
1/4cupcocoa powder

Cheesecake Layer
8ozcream cheese
1/3cupsweetener
1tspvanilla extract
1/2cupheavy whipping cream
Whipped Cream Topping
1cupheavy cream
3tbspsweetener
1tspvanilla extract
Instructions
Preheat oven to 320F/160C and line a 9x9-inch pan with parchment.
Mix almond flour, sweetener, cocoa powder, and salt; add melted butter and vanilla. Press into pan and bake 15 minutes.
Prepare chocolate pudding by blooming gelatin in heavy cream, then heat remaining cream with sweetener, cocoa, and salt. Combine with gelatin mixture and chill.
Mix cream cheese, sweetener, vanilla, and heavy cream for cheesecake. Spread over crust and refrigerate.
Spread chocolate pudding over cheesecake, top with whipped cream, and refrigerate at least 1 hour before serving.
