Delicious stuffed mushrooms filled with a savory Parmesan and herb mixture, perfect as an appetizer or side dish.

Ingredients

  • 16 oz white mushrooms (about 24)
  • 2 tablespoons olive oil (divided)
  • ¼ onion onion (chopped)
  • 3 cloves garlic (minced)
  • ½ cup panko
  • ½ cup Parmesan cheese (freshly grated)
  • 1 tablespoon chopped Italian parsley
  • ½ teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • ½ teaspoon kosher salt
  • Dash red pepper flakes crushed red pepper flakes

Instructions 

  • Preheat oven to 400°F (200°C). Remove stems from mushrooms and chop finely.
  • Cook chopped stems and onion in 1 teaspoon olive oil until tender, then add garlic and cook 1 minute.
  • Mix panko, Parmesan, parsley, thyme, lemon zest, salt, and red pepper flakes. Stir in cooked mixture.
  • Stuff mushroom caps with filling, place on baking sheet, drizzle with remaining olive oil.
  • Bake 20-25 minutes until golden and tender. Serve warm.

Ensure mushrooms are evenly filled for best presentation.
