Instructions
Preheat oven to 400°F (200°C). Remove stems from mushrooms and chop finely.
Cook chopped stems and onion in 1 teaspoon olive oil until tender, then add garlic and cook 1 minute.
Mix panko, Parmesan, parsley, thyme, lemon zest, salt, and red pepper flakes. Stir in cooked mixture.
Stuff mushroom caps with filling, place on baking sheet, drizzle with remaining olive oil.
Bake 20-25 minutes until golden and tender. Serve warm.
