Instructions
Heat heavy cream until simmering, pour over white chocolate, and let sit 2-3 minutes.
Add 3/4 cup crushed strawberries and vanilla; stir until smooth. Chill for 2 hours.
Form mixture into 1-inch balls, freeze 30 minutes.
Melt dark chocolate until smooth. Dip frozen truffles in chocolate, then sprinkle with remaining strawberries.
Refrigerate until set, about 15 minutes. Store in airtight container.
