Delicious and easy-to-make strawberry oatmeal bars with a crumbly crust and juicy filling, perfect for a sweet treat.

Ingredients

Fruits

  • 4 cups whole strawberries (washed hulled and diced)
  • cup granulated sugar (regular sugar)
  • 1.5 tablespoons lemon juice (from half lemon)
  • cup corn starch (to thicken the filling)

Crust and topping

  • 2 cups old-fashioned rolled oats (provides texture)
  • 2 cups all-purpose flour (regular flour)
  • cup granulated sugar (regular sugar)
  • 1.5 teaspoons ground cinnamon (adds warmth and flavor)
  • 14 tablespoons unsalted butter (room temperature)
  • ½ teaspoon salt (balances sweetness)
  • 1 teaspoon pure vanilla extract (for aroma and flavor)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch pan.
  • Mix strawberries and sugar; let sit 10 mins. Add lemon juice and cornstarch, stir.
  • Combine oats, flour, sugar, cinnamon, butter, salt, vanilla in a bowl; mix until crumbly.
  • Press 2/3 of crust mixture into pan. Spread strawberry filling over it.
  • Top with remaining crust mixture. Bake 35-40 mins until golden. Cool before slicing.

Notes

Chill the bars before serving for best texture.
