Enjoy a healthy and delicious breakfast with these easy-to-make baked oatmeal cups packed with fresh strawberries and bananas.

Ingredients

Dry ingredients

  • 3 cups old-fashioned oats
  • 3 tablespoons packed light brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Wet ingredients

  • 1 cup milk
  • 2 eggs eggs
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • ½ cup ripe mashed bananas (about 1½ medium bananas)

Fruits

  • 1 cup diced fresh strawberries (about 7-9 medium strawberries)

Instructions 

  • Preheat oven to 350°F. Grease muffin tin.
  • Mix dry ingredients in a bowl. Whisk wet ingredients in another bowl.
  • Combine wet and dry, then fold in strawberries. Fill muffin cups.
  • Bake for 30-35 minutes until golden. Cool before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
