Delicious tacos featuring tender, sticky chicken topped with fresh mango salsa for a perfect blend of savory and sweet flavors.

Ingredients

Chicken

  • 1.5 lbs boneless chicken thighs, diced
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch

Tortillas

  • 8 small flour or corn tortillas

Mango Salsa

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño seeded and minced
  • Juice of 1 lime lime juice

Garnish & Extras

  • to taste salt and pepper
  • for garnish sesame seeds

Instructions 

  • Whisk honey, soy sauce, sriracha, rice vinegar, garlic, ginger, and cornstarch until smooth.
  • Cook seasoned chicken in a skillet until golden and cooked through, about 5-7 minutes.
  • Add glaze to chicken, cook until thickened and sticky, 3-5 minutes.
  • Mix mango, red onion, cilantro, jalapeño, and lime juice for salsa.
  • Warm tortillas in a skillet or microwave until soft.
  • Assemble tacos with chicken, mango salsa, cilantro, and sesame seeds. Serve with lime wedges.

Notes

For extra flavor, toast the tortillas slightly before assembling.
