Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts
  • 0.25 cup olive oil
  • 0.25 cup lime juice, freshly squeezed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper (optional) (for extra heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Tortillas

  • 6 large flour tortillas 10-12 inch

Cheese

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Vegetables & Toppings

  • 1 each avocado, pitted, peeled, and sliced
  • 0.5 cup corn kernels, fresh or frozen thawed
  • 0.5 cup black beans, rinsed and drained
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup sour cream or Greek yogurt
  • 0.25 cup salsa (your favorite kind)

Optional

  • to taste jalapeƱos, sliced (for extra heat)

Instructions 

  • Whisk together olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper to make the marinade.
  • Marinate chicken in the mixture for at least 30 minutes, then grill over medium-high heat for 6-8 minutes per side until cooked through. Rest and slice or shred.
  • Warm tortillas briefly in a skillet or microwave. Spread sour cream on each, add cheese, chicken, avocado, corn, beans, red onion, salsa, and cilantro. Add jalapeƱos if desired.
  • Fold in the sides and roll tightly. Cut in half and serve immediately or wrap for later.

Notes

For extra flavor, consider marinating the chicken longer or adding hot sauce to the sour cream.
