Instructions
Preheat oven to 415°F (210°C). Arrange sweet potato slices on a baking sheet, coat with olive oil, sprinkle with salt, and roast 10-12 minutes.
Meanwhile, cook ground beef in a skillet with ghee/oil, garlic, onions, and bell pepper until beef is browned and vegetables are softened.
Add mustard, ketchup, coconut aminos, salt, pepper, tomato paste, chili powder, and vinegar. Stir to combine and simmer briefly.
Assemble bowls: place roasted sweet potato slices, top with sloppy joe mixture, and garnish with pickles, pickled onions, and a dollop of mustard.
Notes
Adjust seasonings and toppings to taste. For a saucier mixture, add more ketchup or tomato paste.
