A fresh and tangy Thai mango salad perfect for a light, flavorful meal or side dish.

Ingredients

Fruits and Vegetables

  • 2 pieces ripe mangoes, peeled and diced
  • 1 piece red bell pepper, sliced
  • 1 piece cucumber, diced
  • 0.5 teaspoon red onion, thinly sliced
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • to taste Salt and pepper

Instructions 

  • Combine mango, bell pepper, cucumber, onion, and cilantro in a bowl.
  • Mix lime juice, fish sauce, honey, and ginger in a small bowl.
  • Pour dressing over the salad and toss gently.
  • Season with salt and pepper to taste.
  • Serve immediately or chill for 15 minutes.

Notes

Use ripe mangoes for the best flavor.
