Vegetables

asparagus, washed and trimmed

baby red potatoes, quartered

Instructions
Preheat oven to 400°F (200°C). Toss potatoes and asparagus with 1 tablespoon olive oil, salt, and pepper. Spread on a sheet pan.
Mix balsamic vinegar, honey, Dijon mustard, Italian seasoning, and remaining olive oil. Pour over chicken breasts and coat evenly.
Place chicken on the sheet pan with vegetables. Roast for 20-25 minutes until chicken is cooked through and vegetables are tender.
Garnish with chopped parsley before serving.
Notes
Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
