A quick and flavorful one-pan meal featuring tender chicken and colorful vegetables glazed in honey garlic sauce.

1.5lbsboneless, skinless chicken breasts or thighs, cubed
⅓cuphoney (preferably raw)
3tbsplow-sodium soy sauce (or tamari for GF)
2tbsprice vinegar (or apple cider vinegar)
2tbspextra virgin olive oil (plus extra for veggies)
4–5clovesfresh garlic, minced
½tspred pepper flakes (adjust to spice preference)
½tspfreshly ground black pepper
1tspcornstarch (optional, for thicker sauce)
1tbspwater (if using cornstarch)
1red bell peppersliced
1yellow bell peppersliced
1red onioncut into wedges
2cupsbroccoli florets
1zucchinisliced (optional)
½tsptoasted sesame oil (for finishing)
2green onionsthinly sliced
1tbspsesame seeds
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil and lightly grease.
Cube chicken and marinate with half of the honey garlic sauce for at least 15 minutes.
Prepare vegetables by slicing and tossing with olive oil, soy sauce, garlic, salt, and pepper.
Spread vegetables on the baking sheet, add marinated chicken on top, and bake for 15 minutes. Brush with remaining sauce, flip chicken, and bake another 10–15 minutes. Broil briefly for caramelization.
Rest for 3–5 minutes, then drizzle with sesame oil, sprinkle green onions and sesame seeds before serving.
Notes
For extra flavor, marinate longer or add a splash of lime before serving.
