Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts (cut into thin strips)
  • 1 red bell pepper red bell pepper (cut into strips)
  • 1 yellow bell pepper yellow bell pepper (cut into strips)
  • 1 orange bell pepper orange bell pepper (cut into strips)
  • 1 red onion red onion (cut into wedges)
  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 0.25 cup fresh cilantro (chopped)
  • 2 tablespoons lime juice (freshly squeezed)
  • 6 8-inch flour or corn tortillas (warmed)
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika

Instructions 

  • Slice chicken into thin strips and cut vegetables into similar-sized strips.
  • Mix chili powder, cumin, oregano, paprika, salt, and pepper; coat chicken and vegetables with the spice mixture and olive oil.
  • Roast on a sheet pan at 425°F (220°C) for 15–20 minutes until cooked and slightly charred.
  • Finish by squeezing lime juice over everything, sprinkle with cilantro, and serve with warm tortillas.

Notes

For extra flavor, marinate the chicken with spices and lime juice for 30 minutes before roasting.
