A vibrant and healthy winter salad featuring roasted Brussels sprouts, sweet potatoes, and carrots, topped with a tangy balsamic-Dijon dressing.

Ingredients

Vegetables

  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, cubed
  • 2 cups carrots, sliced
  • 3 tbsp olive oil
  • to taste Salt and pepper
  • 4 cups mixed greens
  • 1/4 cup balsamic vinegar
  • 1 tbsp Dijon mustard

Instructions 

  • Preheat oven to 425°F (220°C). Toss vegetables with olive oil, salt, and pepper, then spread on a baking sheet.
  • Roast for 20-30 minutes until tender and caramelized.
  • Whisk together balsamic vinegar and Dijon mustard to make the dressing.
  • Combine mixed greens and roasted vegetables in a large bowl, drizzle with dressing, and toss gently.

Notes

Feel free to add nuts or cheese for extra flavor.
