Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 red bell pepper diced red bell pepper
  • 1 zucchini sliced zucchini
  • 2 tablespoons olive oil
  • Salt and pepper to taste Salt and pepper (to taste)
  • 1/2 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt to taste Salt (for sauce)

Instructions 

  • Preheat oven to 400°F (200°C). Toss vegetables with olive oil, salt, and pepper.
  • Spread on a baking sheet and roast for 25-30 minutes until tender and crispy.
  • Whisk tahini, water, lemon juice, garlic, parsley, and salt until smooth.
  • Divide roasted vegetables into bowls and drizzle with green tahini sauce. Serve warm.
