Instructions
Combine rice, milk, sugar, vanilla, salt, and cinnamon in a saucepan. Simmer gently, stirring often, for 25-30 minutes until thickened and rice is tender.
While rice cooks, mix Greek yogurt, honey, and lemon juice in a bowl. Set aside.
Peel and slice fresh peaches or drain canned peaches. Cool the rice pudding slightly.
Divide pudding into bowls, add a spoonful of yogurt, top with peaches, and sprinkle with toasted almonds. Serve immediately.
