Ingredients

Rice

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup Greek yogurt
  • 2 cups sliced peaches, fresh or canned
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 0.25 cup sliced almonds, toasted

Instructions 

  • Combine rice, milk, sugar, vanilla, salt, and cinnamon in a saucepan. Simmer gently, stirring often, for 25-30 minutes until thickened and rice is tender.
  • While rice cooks, mix Greek yogurt, honey, and lemon juice in a bowl. Set aside.
  • Peel and slice fresh peaches or drain canned peaches. Cool the rice pudding slightly.
  • Divide pudding into bowls, add a spoonful of yogurt, top with peaches, and sprinkle with toasted almonds. Serve immediately.

Notes

For extra flavor, sprinkle additional cinnamon or drizzle honey before serving.
