Ingredients

Rice Paper Wrappers

  • 8 pieces rice paper wrappers

Vegetables and Protein

  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup cucumber, thinly sliced
  • 1 cup cooked shrimp or tofu (diced)

Herbs and Dipping Sauce

  • 0.25 cup fresh cilantro leaves
  • 0.25 cup fresh mint leaves
  • 0.25 cup peanut sauce or hoisin sauce for dipping

Instructions 

  • Soak a rice paper wrapper in warm water for 10-15 seconds until soft, then lay on a damp surface.
  • Place vegetables, protein, and herbs on the lower third of the wrapper.
  • Fold sides and roll tightly from bottom to top.
  • Repeat with remaining wrappers and fillings.
  • Serve immediately with dipping sauce.

Use fresh herbs for the best flavor and serve immediately for optimal texture.
