Ingredients

Baking ingredients

  • 0.25 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 2 tbsp red food coloring

Frosting ingredients

  • 3.5 cups powdered sugar
  • 0.5 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • Pinch salt

Decorations

  • to taste fresh cranberries (for decoration)
  • to taste rosemary sprigs (for decoration)
  • for dusting powdered sugar (for dusting)

Instructions 

  • Preheat oven to 350°F (175°C), grease and flour a bundt pan.
  • Mix dry ingredients; in another bowl, beat sugar and oil, add eggs, buttermilk, vanilla, vinegar, and food coloring. Combine with dry ingredients.
  • Pour batter into pan and bake for 45-50 minutes. Cool before inverting.
  • Beat cream cheese and butter, add powdered sugar, vanilla, and salt to make frosting.
  • Decorate cooled cake with frosting, cranberries, rosemary, and dust with powdered sugar.

Notes

Ensure the cake is fully cooled before decorating to prevent melting the frosting.
