Ingredients

Cake Batter

  • 2 1/2 cups gluten free flour
  • 3 tbsp cocoa powder
  • 2 cups sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 eggs eggs
  • 1 cup buttermilk
  • 1 tsp kosher salt
  • 1/2 cup vegetable oil
  • 1 tsp espresso powder
  • 1 cup fresh brewed coffee
  • 2 tsp vanilla extract
  • 2 1/2 tbsp red food coloring

Frosting

  • 16 oz cream cheese, room temperature
  • 1 cup butter, room temperature
  • 5 1/2 cups powdered sugar
  • 2 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour cake pans.
  • Mix dry ingredients, then add wet ingredients and food coloring. Divide batter into pans.
  • Bake for 30 minutes or until a toothpick comes out clean. Cool completely.
  • Beat cream cheese and butter, then gradually add powdered sugar and vanilla to make frosting.
  • Frost cooled cake layers. Serve and enjoy!
