A delightful combination of pasta and fresh strawberries, topped with creamy sauce and garnished with mint and almonds for a refreshing treat.

Ingredients

Pasta

  • 1 cup dried pasta (≈ 5-5.5 oz, 140-160 g)
  • 1 lb fresh strawberries (≈ 450 g)
  • 3-4 tablespoons mild honey (can be replaced with sugar or syrup)
  • 6 tablespoons sour cream (can be replaced with thick natural yoghurt)
  • ¼ teaspoon vanilla extract (optional)
  • as needed fresh mint leaves (for garnish)
  • 1 tablespoon almond flakes (for garnish)

Instructions 

  • Cook pasta in boiling salted water until al dente, then drain.
  • Wash and hull strawberries; cut in halves, reserving a few for garnish.
  • Mix strawberries with honey, sour cream, and vanilla; mash to desired consistency.
  • Combine pasta with strawberry sauce; serve immediately or chilled.
  • Garnish with strawberry slices, mint leaves, and almond flakes before serving.

Notes

For a smoother sauce, blend strawberries thoroughly; for a chunkier texture, mash roughly.
