A moist and flavorful mango cake that combines fresh fruit puree with classic baking ingredients for a tropical treat.

Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet ingredients

  • 1 cup ripe mango puree
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract

Optional mix-ins

Instructions 

  • Preheat oven to 350°F (175°C) and grease a cake pan.
  • Whisk dry ingredients together and set aside.
  • Cream butter and sugar until fluffy, then beat in eggs, vanilla, and mango puree.
  • Mix in dry ingredients until just combined, fold in optional mix-ins.
  • Pour batter into pan and bake for 35–40 minutes. Cool before serving.

Notes

Ensure not to overmix the batter for a tender crumb.
