A fresh and vibrant peach salsa perfect for summer snacking or as a topping for grilled dishes.

Ingredients

Vegetables

  • 1 lb tomatoes (diced)
  • 4 oz bell pepper (seeded and finely diced)
  • 2 jalapenos jalapenos (seeded and finely diced)
  • 1 medium onion (finely diced)

Fruits

  • 1.5 lbs peaches (diced, peel on)
  • 0.5 bunch cilantro (chopped)
  • 2 Tbsp lime juice
  • 0.5 tsp salt (or to taste)
  • 0.25 tsp black pepper (freshly ground, to taste)

Instructions 

  • Chop tomatoes and transfer to a large bowl.
  • Finely chop seeded bell pepper, jalapeƱos, and onion; add to bowl.
  • Dice peaches and add to the bowl.
  • Add chopped cilantro, lime juice, salt, and pepper; fold to combine.

Notes

Adjust salt and pepper to taste for best flavor.
