A rustic and delicious peach galette that combines flaky puff pastry with sweet, spiced peaches. Perfect for a quick dessert or brunch treat.

Ingredients

Dough

  • 1 sheet puff pastry (thawed)

Filling

  • 2 teaspoons cinnamon
  • cup brown sugar
  • 1 tablespoon cornstarch
  • 4–5 medium peaches peaches (sliced ⅓ inch thick)
  • 1 large egg (whisked)
  • 2 tablespoons coarse granulated sugar
  • 1/4 cup unsalted butter, melted

Instructions 

  • Preheat oven to 400°F (200°C). Roll out puff pastry and refrigerate.
  • Mix cinnamon, brown sugar, and cornstarch; sprinkle half on pastry.
  • Arrange peach slices over the pastry, sprinkle remaining cinnamon mixture.
  • Fold edges over filling, brush with egg wash, sprinkle with sugar, and drizzle butter.
  • Bake for 30-35 minutes until golden and bubbling. Cool slightly before serving.

Notes

Use ripe peaches for the best flavor and adjust baking time as needed.
