Ingredients

Dough

  • 2 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 large egg
  • 1/4 cup cold water

Peach Filling

  • 3 pounds fresh peaches, peeled, pitted, and sliced
  • 1/4 cup lemon juice
  • 3/4 cup orange juice
  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon granulated sugar
  • 1 tablespoon melted butter

Instructions 

  • Mix flour, sugar, and salt; add shortening until crumbly.
  • Whisk egg with water, form dough, and chill 20–30 mins.
  • Preheat oven to 350°F (175°C). Roll out half dough into dish and bake 15–20 mins.
  • Cook peaches with lemon, orange juice, butter, sugar, spices, and cornstarch until thickened.
  • Pour filling into crust, top with lattice strips, sprinkle sugar, drizzle butter, and bake 35–40 mins.
  • Cool slightly before serving.

Notes

Use ripe peaches for best flavor and consider chilling the dough thoroughly for easier handling.
