Peach Filling

fresh peaches, peeled, pitted, and sliced

Instructions
Mix flour, sugar, and salt; add shortening until crumbly.
Whisk egg with water, form dough, and chill 20–30 mins.
Preheat oven to 350°F (175°C). Roll out half dough into dish and bake 15–20 mins.
Cook peaches with lemon, orange juice, butter, sugar, spices, and cornstarch until thickened.
Pour filling into crust, top with lattice strips, sprinkle sugar, drizzle butter, and bake 35–40 mins.
Cool slightly before serving.
Notes
Use ripe peaches for best flavor and consider chilling the dough thoroughly for easier handling.
