Ingredients

Egg Roll Wrappers

  • 2 cups peaches, diced
  • 0.5 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Oil for frying

Powdered sugar for dusting (optional)

For the Vanilla Bean Sauce:

  • 1 cup heavy cream
  • 0.5 cup sugar
  • 1 vanilla bean vanilla bean

Instructions 

  • Mix diced peaches with sugar, cinnamon, lemon juice, and vanilla extract; let sit for 10 minutes.
  • Place a generous tablespoon of peach filling on each egg roll wrapper, fold edges, and roll tightly.
  • Heat oil in a deep skillet over medium-high heat and fry egg rolls until golden brown (2-3 minutes per side). Drain on paper towels.
  • Prepare vanilla bean sauce by simmering heavy cream and sugar with split vanilla bean until thickened (5-7 minutes).
  • Serve warm egg rolls dusted with powdered sugar, with vanilla bean sauce for dipping.
