A flavorful and easy one-pot meal combining seasoned beef, rice, vegetables, and cheese for a satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 lb extra lean ground beef
  • 1 medium onion, finely diced
  • 1 cup passata
  • 1 cup frozen sweetcorn
  • 1 cup uncooked long-grain rice
  • 2.5 cups water or stock
  • 4 spring onions diced
  • 4-6 tbsp quark
  • 120 g cheddar cheese, grated
  • 1.5 teaspoons cumin
  • 1.5 teaspoons paprika
  • 1.5 teaspoons chili powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper ((adjust to spice preference))

Instructions 

  • Cook ground beef and diced onion in a skillet until browned, about 6-8 minutes.
  • Stir in spices, then add peppers, passata, corn, and rice. Mix well.
  • Pour in water or stock, bring to boil, then simmer covered for 20-25 minutes until rice is tender.
  • Turn off heat, let rest covered for 10-12 minutes.
  • Stir in quark and cheese until melted. Garnish with spring onions and serve hot.

Notes

Adjust spice levels to taste and serve with extra toppings if desired.
