These delicious no-bake energy bites combine the tropical flavors of pineapple and coconut with crunchy cashews for a healthy snack.
Ingredients
Dried Fruits and Nuts

raw cashews, toasted

dried pineapple

shredded, unsweetened coconut, divided

chia seeds

Instructions
Line a baking pan with parchment paper and set aside 1/4 cup of coconut.
Add cashews, pineapple, remaining coconut, chia seeds, and salt to a food processor and blend until dough forms.
Roll the mixture into 2-inch balls and coat each in the reserved coconut.
Place the balls on the prepared pan and refrigerate for 30-60 minutes.
Store in an airtight container in the refrigerator.
