These delicious no-bake energy bites combine the tropical flavors of pineapple and coconut with crunchy cashews for a healthy snack.

Ingredients

Dried Fruits and Nuts

  • 3/4 cup raw cashews, toasted
  • 3/4 cup dried pineapple
  • 1 cup shredded, unsweetened coconut, divided
  • 3/4 tablespoon chia seeds
  • 1/4 teaspoon salt

Instructions 

  • Line a baking pan with parchment paper and set aside 1/4 cup of coconut.
  • Add cashews, pineapple, remaining coconut, chia seeds, and salt to a food processor and blend until dough forms.
  • Roll the mixture into 2-inch balls and coat each in the reserved coconut.
  • Place the balls on the prepared pan and refrigerate for 30-60 minutes.
  • Store in an airtight container in the refrigerator.

Notes

Keep the mixture chilled for easier shaping.
