These delicious no-bake treats combine oats, coconut, and chocolate for a quick, healthy snack or dessert.

Ingredients

Dried ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1 cup dark chocolate chips

Wet ingredients

  • 0.5 cup nut butter
  • 0.33 cup honey or maple syrup
  • 1 tsp vanilla extract

Optional add-ins

  • chopped nuts, dried fruit, chia seeds, or flaxseeds optional add-ins (as desired)

Instructions 

  • Line a baking sheet with parchment paper.
  • Melt chocolate chips in 30-second intervals, stirring until smooth.
  • Mix nut butter, honey, and vanilla until smooth.
  • Combine melted chocolate with nut butter mixture.
  • Stir in oats, coconut, and optional add-ins. Scoop onto sheet and refrigerate for 20 minutes.
