Delicious and easy mini pizzas perfect for a quick lunch or snack, made with simple ingredients and baked to perfection.
Ingredients

self-raising flour

full-fat plain Greek yogurt
Toppings

tomato paste concentrated puree

freshly shredded mozzarella

pepperoni
Instructions
Preheat oven to 200°C (400°F) or 180°C (350°F) for fan-forced. Line a baking tray with parchment paper.
Mix flour and yogurt until large flakes form, then knead into a soft dough (~2 minutes).
Roll out dough to 1 cm thickness and cut into rounds with a mug or cutter.
Place rounds on tray, spread with tomato paste, then top with mozzarella and pepperoni.
Bake for 12-14 minutes until golden and cheese melts. Cool slightly before serving.
Notes
Use a cookie cutter for even-sized mini pizzas for best results.
