Delicious and easy mini pizzas perfect for a quick lunch or snack, made with simple ingredients and baked to perfection.

Ingredients

Dough

  • 2 cups self-raising flour
  • 1 cup full-fat plain Greek yogurt

Toppings

  • cup tomato paste concentrated puree
  • 1 cup freshly shredded mozzarella
  • ½ cup pepperoni

Instructions 

  • Preheat oven to 200°C (400°F) or 180°C (350°F) for fan-forced. Line a baking tray with parchment paper.
  • Mix flour and yogurt until large flakes form, then knead into a soft dough (~2 minutes).
  • Roll out dough to 1 cm thickness and cut into rounds with a mug or cutter.
  • Place rounds on tray, spread with tomato paste, then top with mozzarella and pepperoni.
  • Bake for 12-14 minutes until golden and cheese melts. Cool slightly before serving.

Notes

Use a cookie cutter for even-sized mini pizzas for best results.
