A quick and healthy appetizer featuring creamy avocados filled with a flavorful tuna salad inspired by Mediterranean flavors.

Ingredients

Avocados

  • 2 pieces ripe avocados
  • 1 can tuna, drained (5 oz can)
  • 0.25 cup cherry tomatoes, diced
  • 0.25 cup cucumber, diced
  • 0.25 cup Kalamata olives, pitted and chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Instructions 

  • Cut avocados in half, remove pits, and scoop out some flesh to create a bowl.
  • Mix tuna, cherry tomatoes, cucumber, olives, red onion, parsley, and lemon juice in a bowl. Season with salt and pepper.
  • Fill avocado halves with the tuna mixture and press gently.
  • Serve immediately, garnished with extra parsley if desired.
