Instructions
Wash all vegetables and dice tomatoes, cucumber, and onion.
Drain and rinse chickpeas; combine with chopped parsley, onion, tomatoes, and cucumber in a bowl.
Whisk olive oil and lemon juice; season with salt and pepper.
Pour dressing over salad and toss to coat.
Crumble feta cheese on top before serving.
Notes
For extra flavor, add a pinch of oregano or black pepper.
