A fresh and vibrant salad combining chickpeas, vegetables, and feta for a quick, healthy meal.

Ingredients

Canned chickpeas

  • 1 can Canned chickpeas (drained and rinsed)

Cherry tomatoes

  • 1 cup Cherry tomatoes (diced)

English cucumber

  • 0.5 cup English cucumber (diced)

Red onion

  • 0.25 cup Red onion (diced)

Fresh parsley

  • 2 tablespoons Fresh parsley (chopped)

Feta cheese

  • 0.5 cup Feta cheese (crumbled)

Extra virgin olive oil

  • 2 tablespoons Extra virgin olive oil

Lemon juice

  • 1 tablespoon Lemon juice (freshly squeezed)

Instructions 

  • Wash all vegetables and dice tomatoes, cucumber, and onion.
  • Drain and rinse chickpeas; combine with chopped parsley, onion, tomatoes, and cucumber in a bowl.
  • Whisk olive oil and lemon juice; season with salt and pepper.
  • Pour dressing over salad and toss to coat.
  • Crumble feta cheese on top before serving.

Notes

For extra flavor, add a pinch of oregano or black pepper.
