Ingredients

Chicken Bowls

  • 1.5 lbs chicken breasts, diced
  • 1.5 tbsp sesame oil, divided
  • 4 cups frozen stir-fry vegetables
  • 2 cups cooked brown rice or quinoa
  • 1 tbsp sesame seeds, for garnish
  • 2 garlic cloves minced garlic
  • 2 tbsp fresh ginger, grated
  • 1.5 tbsp raw honey
  • cup coconut aminos
  • ½ cup vegetable or chicken broth
  • ½ tbsp gluten-free flour

Instructions 

  • Whisk garlic, ginger, honey, coconut aminos, and broth in a small pot. Simmer, then whisk in flour until thickened.
  • Heat 1 tbsp sesame oil in a skillet, cook chicken until golden, then add sauce and simmer 2 minutes.
  • Sauté frozen vegetables in remaining sesame oil for 5–6 minutes.
  • Divide rice or quinoa into containers, top with chicken and vegetables, then sprinkle with sesame seeds.

Notes

Store in airtight containers for meal prep. Adjust sauce ingredients for desired sweetness.
