These delicious breakfast burrito cups are perfect for meal prep, combining eggs, beans, and veggies in a portable, baked form.

Ingredients

Eggs

  • 6 large eggs
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup diced bell peppers (red and green)
  • 0.5 cup diced onion
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 0.5 teaspoon paprika
  • 0.5 teaspoon cumin
  • to taste salt and pepper
  • 6 whole wheat tortillas whole wheat tortillas
  • for garnish fresh cilantro
  • optional salsa, for serving

Instructions 

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • Whisk eggs with paprika, cumin, salt, and pepper. Mix in beans, peppers, onion, and half the cheese.
  • Cut tortillas into circles slightly larger than muffin cups. Press into cups.
  • Pour egg mixture into each tortilla, about 3/4 full. Top with remaining cheese.
  • Bake for 20-25 minutes until eggs are set and tops are golden. Garnish with cilantro.

Notes

Store in an airtight container for up to 3 days. Reheat in the microwave for a quick breakfast.
