These delicious breakfast burrito cups are perfect for meal prep, combining eggs, beans, and veggies in a portable, baked form.
Ingredients

cooked black beans, drained and rinsed

diced bell peppers (red and green)

Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin.
Whisk eggs with paprika, cumin, salt, and pepper. Mix in beans, peppers, onion, and half the cheese.
Cut tortillas into circles slightly larger than muffin cups. Press into cups.
Pour egg mixture into each tortilla, about 3/4 full. Top with remaining cheese.
Bake for 20-25 minutes until eggs are set and tops are golden. Garnish with cilantro.
Notes
Store in an airtight container for up to 3 days. Reheat in the microwave for a quick breakfast.
