A flavorful and easy-to-make savoury rice dish packed with vegetables and aromatic ingredients, perfect for a quick meal.

Instructions
Heat oil and sauté onion for 5 minutes. Add garlic and chilli, cook 1 minute.
Add carrots, peppers, and rice; stir for 2-3 minutes until rice looks translucent.
Pour in stock, add tomatoes, peas, salt, and pepper. Bring to boil, then cover and simmer for 20 minutes.
Turn off heat, let sit covered for 5-10 minutes. Fluff with a fork and serve.
Notes
Ensure the lid remains on during cooking to trap steam for fluffy rice.
