A flavorful and quick dish combining ripe mango with seasoned rice, perfect for a refreshing meal.

Ingredients

Spices and Aromatics

  • 1 tbsp Olive Oil
  • 1 tsp Mustard Seeds
  • 1 chilies Whole Dried Red Chili
  • 0.5 tsp Urad Dal
  • 0.5 tsp Chana Dal
  • 5 curry leaves Curry Leaves

Vegetables

  • 1 sliced Onions
  • 0.5 cup Mango (Grated Raw)
  • 0.5 tsp Turmeric
  • 1.5 tsps Chili Powder
  • 2 tsps Coriander (Powder)

Main Ingredient

  • 2 cups Brown Rice (Cooked)
  • to taste Salt

Instructions 

  • Heat oil and add mustard seeds, chilies, urad dal, chana dal, and curry leaves. Roast until golden.
  • Add onions and cook until translucent. Mix in mango and spices, cook for 2 minutes.
  • Add cooked rice and salt, toss well, cover, and cook for 3-4 minutes. Serve hot.

Notes

Adjust spices to taste and enjoy with a side of curd.
