A vibrant and fresh pesto combining the sweetness of mango with aromatic basil and nuts, perfect for pasta or spreads.

Ingredients

Fresh Basil

  • 4 oz fresh basil

Nuts of choice

  • 1/2 cup toasted pine nuts, walnuts or almonds

Garlic

  • 1-2 cloves garlic

Mango

  • 1 cup mango, (or to taste)

Salt

  • 3/4 tsp salt, (or to taste)

Olive Oil

  • 1/2 cup olive oil

Parmesan Cheese

  • 1/2 cup parmesan cheese, (or to taste)

Spaghetti

  • 1 lb spaghetti, cooked

Instructions 

  • In a food processor, blend basil, nuts, garlic, mango, and salt until smooth.
  • Slowly add olive oil while processing until combined.
  • Stir in grated parmesan cheese.
  • Toss the pesto with cooked spaghetti and serve.

Notes

Adjust seasoning and cheese to taste for best flavor.
