A vibrant and refreshing Mango Parfait layered with homemade granola, fresh mango, and Greek yogurt, perfect for a quick and healthy treat.

Ingredients

Fruits

  • 1/2 large ripe mango
  • 2/3 cups Greek yogurt ((160 grams))
  • 1/4 cup homemade mango compote
  • 1/4 cup homemade granola
  • 1/4 cup old-fashioned rolled oats
  • 3 pieces dried mangoes
  • 2 tablespoons unsalted chopped cashews
  • 1 to 2 tablespoons raw honey
  • 1 tablespoon olive oil
  • a generous pinch pinch kosher salt
  • as needed fresh mint leaves

Instructions 

  • Preheat Air Fryer at 370°F (188°C) for 5 minutes.
  • Mix oats, honey, olive oil, salt, and cashews; spread on parchment in Air Fryer tray.
  • Air fry for 5 minutes until crisp; cool the granola.
  • Chop dried mangoes and mix with cooled granola.
  • Assemble parfait layers with mango compote, yogurt, granola, and mango pieces; garnish with mint.

Notes

Use ripe mango for best flavor and adjust honey sweetness to taste.
