Instructions
Preheat Air Fryer at 370°F (188°C) for 5 minutes.
Mix oats, honey, olive oil, salt, and cashews; spread on parchment in Air Fryer tray.
Air fry for 5 minutes until crisp; cool the granola.
Chop dried mangoes and mix with cooled granola.
Assemble parfait layers with mango compote, yogurt, granola, and mango pieces; garnish with mint.
Notes
Use ripe mango for best flavor and adjust honey sweetness to taste.
