Delight in these sweet and tangy mango crumb bars with a buttery crust and crumb topping, perfect for a summer treat.

Ingredients

Fruits

  • 2 1/2 cups ripe mangoes (small chunks) (2-3 mangoes)
  • 3-5 tbsp granulated sugar
  • 1/2 tbsp corn starch

Dry ingredients

  • 2 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Butter and sugars

  • 3/4 cup cold unsalted butter (must be cold)
  • 2/3 cup brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix mango chunks, sugar, and corn starch; set aside.
  • Combine flour, baking powder, and salt. Cut in cold butter until crumbly.
  • Mix brown sugar, egg, and vanilla; add to dry mixture. Press two-thirds into pan.
  • Spread mango mixture over crust, then sprinkle remaining crumbs on top. Bake 35-40 mins.
  • Cool, then cut into 9 bars and serve.

Notes

Ensure butter is cold for best crumb texture.
