A delicious and nutritious make-ahead breakfast combining the tropical flavors of mango and coconut with hearty oats and chia seeds.

Ingredients

Dried ingredients

  • 0.75 cup rolled oats
  • 3 tablespoons chia seeds
  • 1 cup coconut milk (or 1 can full-fat coconut milk)
  • 1 tablespoon maple syrup or honey
  • 0.25 teaspoon vanilla extract
  • 1 cup diced mango (fresh or frozen)
  • Pinch sea salt

Optional toppings

  • 1 tablespoon shredded coconut
  • ¼ teaspoon cinnamon

Instructions 

  • Combine oats, chia seeds, coconut milk, sweetener, vanilla, mango, and salt in a jar or bowl.
  • Stir well, rest 3–5 minutes, then stir again.
  • Cover and refrigerate at least 4 hours or overnight.
  • Stir before serving. Add extra milk if needed and top with shredded coconut and cinnamon if desired.

Notes

For extra flavor, top with additional fresh mango or shredded coconut.
