Instructions
In a bowl, whisk together coconut milk, chia seeds, maple syrup, vanilla extract, and lime juice if using.
Let the mixture sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight until thickened.
In a blender, puree the mango chunks until smooth.
Layer the chia pudding with mango puree and top with toasted coconut flakes before serving.
