A vibrant and refreshing pasta salad combining sweet mango, creamy avocado, and zesty cilantro lime dressing, perfect for a light meal or side dish.

Ingredients

  • 2-3 pieces Mango, medium size, peeled, diced bite size
  • 2-3 pieces Avocado, medium to large, peeled, diced bite size
  • 1-2 stalks Celery, small diced (optional) (optional)
  • 1/4 cup Pine Nuts, toasted
  • 1/2 lbs Pasta, penne or farfalle
  • 1 cup Cilantro, fresh leaves, more for garnish
  • 1/2 piece Jalapeno, seeds scraped off, skip if you don't like spicy (optional)
  • 3 pieces Lime, about 1/3 cup lime juice
  • 1 tsp Oregano, dried
  • 1/4 cup Olive Oil
  • 1/2 tsp Salt and Black Pepper, adjust per taste (adjust to preference)

Instructions 

  • Cook pasta in boiling salted water until al dente (10-12 minutes), then drain and rinse with cold water.
  • Blend cilantro, lime juice, jalapeno, oregano, olive oil, salt, and pepper in a food processor to make the dressing.
  • Toss cooked pasta with half of the dressing, then cool completely.
  • Add diced mango, avocado, celery (if using), remaining dressing, and chopped cilantro; toss gently.
  • Top with toasted pine nuts, garnish with extra cilantro, and serve immediately or refrigerate.

Notes

For extra flavor, add a squeeze of fresh lime before serving.
