Instructions
Cook pasta in boiling salted water until al dente (10-12 minutes), then drain and rinse with cold water.
Blend cilantro, lime juice, jalapeno, oregano, olive oil, salt, and pepper in a food processor to make the dressing.
Toss cooked pasta with half of the dressing, then cool completely.
Add diced mango, avocado, celery (if using), remaining dressing, and chopped cilantro; toss gently.
Top with toasted pine nuts, garnish with extra cilantro, and serve immediately or refrigerate.
Notes
For extra flavor, add a squeeze of fresh lime before serving.
