Ingredients

Dried ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon fine sea salt

Wet ingredients

  • 1 cup fresh ricotta cheese
  • 2 large eggs
  • 0.5 cup milk ((whole or 2%))
  • 2 tablespoons fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract

For cooking

  • to taste butter or oil for cooking pancakes

Instructions 

  • Mix ricotta, eggs, milk, lemon zest, lemon juice, and vanilla until smooth.
  • Combine dry ingredients in a bowl and whisk thoroughly.
  • Fold dry mixture into wet ingredients gently; do not overmix.
  • Heat skillet with butter or oil over medium heat. Pour 1/4 cup batter per pancake.
  • Cook until bubbles form, flip, and cook until golden, about 2-3 minutes each side.
