A vibrant and flavorful Greek-inspired lemon rice side dish perfect for any meal.

Ingredients

Rice and liquids

  • 2 cups long grain rice (rinsed)
  • 3 cups low-sodium chicken stock
  • 1/3 cup fresh lemon juice
  • 1 teaspoon turmeric
  • 1 teaspoon fine sea salt
  • 1/3 cup extra virgin olive oil
  • 1 large onion (finely diced)
  • 3 cloves garlic (minced)
  • 1/2 cup minced flat-leaf Italian parsley
  • 2 tablespoons minced dill
  • 1 tablespoon lemon zest

Instructions 

  • Rinse rice and soak in cold water for 5 minutes, then drain.
  • Sauté diced onion in olive oil until translucent, then add garlic and cook briefly.
  • Add rice, lemon juice, stock, salt, and turmeric; bring to boil, then simmer covered for 20-25 minutes.
  • Remove from heat, let sit covered for 10 minutes, then fluff with a fork.
  • Stir in parsley, dill, and lemon zest; serve warm.

Notes

For extra flavor, garnish with additional herbs or lemon wedges.
