A vibrant and flavorful Greek-inspired lemon rice side dish perfect for any meal.
Ingredients
Rice and liquids

long grain rice (rinsed)

low-sodium chicken stock

fresh lemon juice

extra virgin olive oil

onion (finely diced)

Instructions
Rinse rice and soak in cold water for 5 minutes, then drain.
Sauté diced onion in olive oil until translucent, then add garlic and cook briefly.
Add rice, lemon juice, stock, salt, and turmeric; bring to boil, then simmer covered for 20-25 minutes.
Remove from heat, let sit covered for 10 minutes, then fluff with a fork.
Stir in parsley, dill, and lemon zest; serve warm.
Notes
