Delight in these tangy lemon bars with a buttery oat crust and crumbly topping, perfect for a sweet and citrusy treat.

Ingredients

dry ingredients

  • 1 cup quick-cooking oats
  • 1.5 cups all-purpose flour
  • 1 cup light brown sugar, packed
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.75 cup unsalted butter, melted

wet ingredients

  • 1 can sweetened condensed milk
  • 0.5 cup freshly squeezed lemon juice (about 3 lemons)
  • 2 large egg yolks
  • 1 teaspoon lemon zest
  • 0.125 teaspoon kosher salt

Instructions 

  • Preheat oven to 350°F (175°C) and line a 9x9-inch pan with parchment.
  • Mix oats, flour, sugar, baking powder, and baking soda. Add melted butter and combine. Reserve 2 cups for topping.
  • Press half of the mixture into the pan as crust. Bake for 12-15 minutes until golden.
  • Whisk condensed milk, lemon juice, egg yolks, lemon zest, and salt. Pour over crust.
  • Crumble remaining oat mixture over lemon filling. Bake for 20-25 minutes until set and golden.
  • Cool to room temperature, then refrigerate at least 1 hour before serving.

Notes

For best results, chill the bars before slicing.
