A flavorful and easy-to-make Korean-inspired dish featuring ground turkey, rice, and fresh vegetables.

Ingredients

Rice

  • 1 1/2 cups white rice, dry

Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar

Main ingredients

  • 1 pound ground turkey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 2 green onions green onions, thinly sliced
  • 2 tablespoons gochujang (or other red chili paste)
  • 2 cups carrots, shredded
  • 1 cup cucumber, thinly sliced

To serve

  • to taste sesame seeds

Instructions 

  • Cook rice in 3 cups water until fluffy, about 15 minutes.
  • Whisk soy sauce, brown sugar, and rice vinegar; set aside.
  • Cook ground turkey in sesame oil until partly cooked, add green onions, then add sauce mixture, garlic, and gochujang; cook until thickened.
  • Optional: Sauté shredded carrots in sesame oil for 2-3 minutes or serve raw.
  • Assemble bowls with rice, turkey, carrots, cucumber, and garnish with sesame seeds and green onions.

Notes

Store leftovers in an airtight container for up to 4 days.
