Delight in these rich, low-carb red velvet brownies that combine vibrant color with a moist, chocolatey texture.

Ingredients

Dry ingredients

  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1/3 cup granulated sugar-free sweetener
  • 1 tbsp cocoa powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt

Wet ingredients

  • 1/2 cup greek yogurt or sour cream
  • 3 tbsp butter (melted)
  • 1 large egg egg
  • 1/2 tsp vanilla extract

Food coloring

  • as needed Red food coloring

Chocolate chips

  • 1/2 cup sugar-free white chocolate chips (milk or dark chocolate also work!)

Instructions 

  • Preheat oven to 350°F and line an 8x8-inch pan with parchment.
  • Mix dry ingredients, then add yogurt, melted butter, egg, vanilla, and food coloring.
  • Fold in chocolate chips, spread batter into pan, and top with extra chips if desired.
  • Bake for 20 minutes, cool, slice, and serve.

Notes

Ensure not to overbake to keep brownies moist.
